It was a chance encounter with an old friend that set me on this path. I’d spent most of my twenties travelling but fell into admin work when I came back. Then, just as I turned 30, I caught up with an old flatmate and discovered he was following his two passions, food and music, working as a chef and playing in a band. It was a real wake-up call. I realised I should be doing what I love, something creative. That was in June, and by the end of August, I’d moved to London to train as a pastry chef. As part of my apprentice-ship I spent a year on the 39th floor of the Gherkin building. It was an amazing place to start, with incredible views of the city – though I didn’t get to see much from the kitchen! It was here I learned my craft and became fascinated by techniques. Quite quickly I realised I liked focusing on petits fours and chocolates – making something very small and precise is what I enjoy.
