Ican remember the day – the very minute, in fact – that I tasted great coffee for the first time. It was 2008, I was in a café in Sydney and I had an espresso that was life-changing. Where was the horrible bitter stuff I was used to? This had a sweet, intense flavour that got me hooked. I worked in Australia for six years, and fell in love with coffee. The scene there is so advanced and there are loads of independent cafés specialising in different beans. I wanted to bring that back here, so I returned to Scotland and opened Papercup on Great Western Road two and a half years ago. I run the business with my wife. As well as serving our own freshly brewed coffee, we have a small food menu in the café. We roast the beans on the premises and sell bags of fresh coffee. In a small business like this, you have to do it all yourself – I’m the general all-round dogsbody who takes care of everything behind the scenes.
